Modiga’s history goes back to the Middle Ages in Italy when the people started cooking chicken with different sauces like this Italian sauce which was created during the renaissance period. This is not a very common recipe as it is only found in some parts of Italy, and it was only known to a few people.
The traditional way of preparing this sauce was to make a small cut in the chicken breast and pour the sauce into the cut. But the best way of preparing this sauce is to put the sauce into a bowl and cook the chicken in a pan until cooked thoroughly, then take it off and serve. This way is better for two reasons:

Chicken Modiga Recipe
Ingredients:
- 2 sticks of butter
- 5 tbs flour
- 2 small packages of boneless skinless chicken breast
- 2 cups Italian bread crumbs
- 3 cups chicken stock
- 1 cup thinly sliced mushrooms
- 2 ounces chopped prosciutto ham
- 1 lemon – juice
- 1 cup dry white wine
- Garlic
- 16 ounces provolone cheese shredded

Instructions:
Step 1: Preheat the oven
Preheat the oven to 350 degrees F.
Step 2: Prepare your chicken
Rinse and clean the chicken. Dredge the chicken in the Italian bread crumbs.
Step 3: Melt and brush
Brush the breaded chicken with melted butter on both sides to moisten it. Grill the chicken for at least 5 minutes on both sides, or until done.
Step 4: Sauté
Sauté the garlic, butter, and mushrooms in a pan.
Step 5: Melt and mix
In a separate dish, add 2 sticks of butter and flour. Heat them in the microwave until melted and creamed together.
Step 6: Boil and mix
In a saucepan, bring the chicken stock to a boil, and add the flour and butter mix to the chicken stock until it becomes thick.
Step 7: Reduce and mix
Reduce to simmer and add prosciutto, mushrooms, lemon juice, and wine. Mix well and allow to simmer for around 10 minutes.
Step 8: Pour and sprinkle!
Pour the sauce over the chicken and sprinkle the shredded cheese over the top.
Step 9: Bake
Bake in the center of your oven for around 10 minutes, or until cheese is melted.
Step 10: Enjoy!

Chicken Modiga Recipe (With Mushrooms)
Ingredients:
- 4-6 (pounded thin) Chicken Breasts – you can replace chicken with steak if you like
- 1/4 cup of extra virgin olive oil
- Salt and pepper (to taste)
- 1 cup of panko bread crumbs
- 4 cloves of garlic, minced
- 3/4 cup butter, divided
- 8 oz mushrooms, sliced
- 1 cup of frozen peas
- 1 cup of dried mushroom or chicken broth
- 1 cup of heavy cooking cream
- 1/4 cup of marsala wine
- 2 tablespoons of flour
- 1/2 cup shredded provolone cheese
Method:
Step 1: Rehydrate the mushrooms
Add two cups of water to the dried porcini mushrooms and boil them for a few minutes to produce a mushroom broth. You can use chicken stock for this if you’d prefer.
Step #1: Infuse
Prepare the garlic-infused olive oil blend by adding the minced garlic to half a cup of olive oil. This will infuse nicely, giving you a rich, full flavor. Set it aside.
Step #2: Thicken your chicken
Place the chicken breasts into a Ziplock and pound the chicken breasts to make them thinner (the thickness should be around 1/2 inch). Add about 3 tablespoons of oil and salt to the bag and coat the chicken breasts with bread crumbs.
Step #3: Heat your pan
Heat your pan on medium heat and add two tablespoons of olive oil and one teaspoon of butter.
Step #4: Fry
Place the pounded chicken on the pan and fry it until it browns on both sides. Remove from the pan and keep the chicken in the oven, to keep it warm.
Step #5: Sauté
In a different pan, mix one tablespoon of olive oil and one teaspoon of butter. Sauté the mushrooms until they turn brown. Next, add the peas and stir fry until soft.
Step #6: Mix
Add half a cup of mushroom or chicken broth to the pan. Then, add flour to the broth and heat on low heat. Whisk the mixture until it becomes smooth, and ensure there are no lumps. The Modiga sauce is ready!
Step #7: Keep mixing
Add the cream and marsala wine to the roux, and keep stirring. Now, cut the mushrooms and add them to the roux. At this point, stir in the shredded cheese.
Step #8: Enjoy!
Top the chicken with the Modiga sauce. Enjoy!
Serve it hot with buttered noodles. You can also serve it with pasta if you’d prefer. The cheese gives this dish a tangy, sweet flavor. Yum yum!
