The Zankou Chicken Marinade Recipe - 1
This is a simple recipe that takes only a few minutes to prepare. It uses a mixture of spices that are easy to find and reasonably inexpensive.
- To marinate chicken breasts for Zankou chicken
- 250 g of tomato sauce
- 1 tbsp of lemon juice
- 2 cloves of garlic peeled and crushed
- 1 tsp of paprika
- 1/2 tsp of cayenne pepper
- 1/4 tsp of ground nutmeg
- 1/2 cup of olive oil
- 1 tsp of salt
- 1/2 tsp of black pepper
- 8 boneless chicken breast fillets about 2 pounds
Place all ingredients (except the chicken) into a large bowl or deep plate. Mix the ingredients well to combine.
Put the chicken breasts into the marinade and repeatedly turn them over, so they are completely coated. Let it sit in the marinade for at least 30 minutes.
In a medium skillet, heat oil over a medium-high heat. Sear the chicken for 4-6 minutes on each side, or until cooked through. Serve with rice.
